style=\"text-align: center;\">Cavage de la truffe<\/h2>\n<p style=\"text-align: justify;\">Le Lot demeure l\u2019un des premiers d\u00e9partements fran\u00e7ais producteurs de truffes.<br \/>\nLa truffe noire du Quercy se d\u00e9veloppe dans le sol calcaire au pied des petits ch\u00eanes du causse. Ces ch\u00eanes sont aujourd\u2019hui mycoris\u00e9s : ce sont des plants auxquels on a associ\u00e9 le myc\u00e9lium de la truffe afin d\u2019augmenter les chances de cueillette.<br \/>\nEn d\u00e9pit de cette innovation, la formation de la truffe demeure une \u00e9nigme et sa cueillette, qui se d\u00e9roule \u00e0 l\u2019aide de chiens ou de cochons sp\u00e9cialement dress\u00e9s, demeure al\u00e9atoire.
